So I know, or am at least pretty sure that 7" is the maximum width for wheels in ST, so if my car is classed in ST and the only good wheels I can find are 8" wide, where does that put me?
Maximum in ST I believe is 7.5". If you run an 8" wheel you'll probably have to run STX.

Those are the main things that ST-classes allow, so you'll be right in the mix.
Good driving (#1) and Good tires (#2) will put you more near the top compared to other cars. Good shocks, limited slip diff (STX adds this over ST), and a not-totally-outclassed car would help, too.
Depends on what car we are talking about and how well you drive.
A really good driver in a moderately prepped car can do well against a poor driver in a well-prepped car.
Besides the mods you mentioned, other allowable STX mods are LSD, headers, exhaust, lightweight seats, shocks, and other minor things.
Just bring what you have and have some fun!

I have an 04 Toyota Matrix XRS, and I have never Auto X yet, was going to start earlier this season but my springs got back ordered and should be in today...as for the wheels I still have to save enough for them anyways :D
